Ultra-processed foods, or UPFs, are often defined by how much they've been changed from their natural state and the number of ingredients. However, as the dietitian in the story points out, this doesn't always tell you about their nutritional value. Some minimally processed foods can be less healthy than certain UPFs, so it's a bit more complex than just the label.
