How do cycling stages work?

A stage in cycling is a single day's race within a multi-day tour. Each stage has its own winner, but riders also compete for the overall lead based on their cumulative times. Vollering won stage eight, but more importantly, her performance was strong enough to put her in the yellow jersey for the entire race.
