What is listeria?

Listeria monocytogenes is a type of bacteria that can cause a foodborne illness called listeriosis. It's often found in soil, water, and some animals, and can contaminate a range of foods, particularly chilled ready-to-eat items. While often mild, as seen with the Waitrose recall, it can be serious for vulnerable groups.
