How do apps get updated?

Apps like Excel get updated in various ways. Sometimes it's a big new version you download, or smaller patches arrive automatically in the background. Microsoft removing the COPILOT() function is an example of an update, where a feature is taken out or changed, often to improve the overall user experience or introduce better alternatives.
